You've got to make this strawberry cake: https://smittenkitchen.com/2011/05/strawberry-summer-cake/

Also, you could freeze a bunch, blend them together with some sugar and top with prosecco for a yummy cocktail.

This strawberry cake from Claire Saffitz is my absolute favorite way to showcase berries. https://www.youtube.com/watch?v=6vta9XNsQss

Hello. A strawberry idea. Add to fresh risotto. I lived near Lake Como many years ago and this sounds strange. It's delicious! And looks so pretty, a pale pink perfect for Easter. Risotto alle fragile. My recipe is from a risotto cookbook by constance del Nero. I'm sure you could find one to follow.

I had a massive strawberry surplus last year and decided to quick-pickle some, which was an amazing way to turn strawberries savory! I served them with soft cheese on a sliced baguette, recipe is here: https://joanniesen.substack.com/p/pickled-strawberries-mezcal-potato-salad

A tip I got awhile back was to make shrubs with any fruit that is about to bad. It's super easy! You just do equal parts vinegar and sugar and add in whatever fruit you have. You can also add in a complimentary herb. They are awesome to just have on hand for making yummy drinks (mock or real). I have had a lot of fun experimenting with different combinations. Here is a recipe example: https://www.bonappetit.com/recipe/any-berry-shrub. But you can really do anything!

I’m a little late to the party, but have you ever made homemade jam? My best friend’s mom taught us how to do it year ago and - while I haven’t made the time to do it since - it was a really fun activity!

I freeze fresh fruit if I have too much and use for smoothies or to bake with later.
